My wife and I are driving the Jeep from Clarksville, TN all the way to Highland,CA for Xmas to see my mother. We will be on the I-40 most of the way (between Memphis and California). We want to stop at a couple of places along the way, just to sight see or something to use the Jeep on. We will try and hit one or two going out and a couple of different place coming back.
Does anyone have any suggestions??

There are plenty wheeling adventures in between the two points depending on your travel.
Is wheeling or site seeing more important for this one?

Stop in Oklahoma at the Route 66 Museum! You'll see signs for it way before you get there. Also, just before you get into Texas there is a little town that they claim was used as the model for the town in the movie cars. There are tons of things to see and do! It's a great trip. I came across country in March/April from WV to CA. Just watch the billboards! Awesome trip! Have fun and be safe!!!
Do you plan on coming thru Vegas? If you are let me know. Maybe we can meet up and have a couple of beers. Could be fun meeting some of the members in person.
